Chocolate Dream Cake / Cupcakes

This gluten-free chocolate cake recipe also makes incredible cupcakes. Great for birthdays!

Ingredients
  • 1 cup banana flour (Zuvii Banana Flour)v
  • 1/3 cup rice flour
  • 1 3/4 cup sugar
  • 2 TB corn starch
  • 1 tsp Xanthan Gum
  • 3/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk or milk substitute of choice
  • 1/2 vegetable oil
  • 2 tsp vanilla
  • 1 cup hot coffee
Instructions

Combine all dry ingredients in large bowl.  In another bowl combine 2 Eggs (lightly beaten) with Milk, Vegetable Oil and Vanilla.  Add Wet ingredients to Dry ingredients, beat until smooth.  Whisk Coffee into batter.  Grease 8’ round pan, bake at 350 for 30-35 mins or 17-20 minutes for Cupcakes.  For pan cool for 5-10 minutes, turn out onto rack to cool.

-Makes two 8’ round pan or 18-20 Cupcakes

 

Cream Cheese Frosting

  • 8oz Cream Cheese (soften)
  • 1/4 C Butter (soften)
  • Splash of Milk
  • 1 t Vanilla
  • 1/2 C Powder Sugar (add more or less for preferred sweetness)

 

*Mix until creamy.  Refrigerate for 20 mins
